✔️GREAT HEALTH BENEFITS. Cordyceps is often referred to as ‘the performance mushroom’ due to its popularity among athletes for it’s energy boosting properties. Cordyceps is also prized in traditional systems of medicine for its ability to support the immune system.
✔️USE IN ENERGY AND IMMUNE BOOSTING TEA. To make cordyceps tea, start by heating 500ml water in a kettle or on the stove. Add 6-7g of dried cordyceps mushrooms and allow them to steep for 10 minutes. Turn the heat down and add 1/4 teaspoon of ginger powder and 2 teaspoons of lemon juice. Steep for 5 additional minutes. Pour the mixture through a tea strainer to remove the mushrooms, pour into your favourite mug and enjoy!
✔️USE IN COOKING. Cordyceps mushrooms have a delicious nutty flavour and can be roasted and added to salads or blended as part of sauces, soups and stews for additional health benefits.
Sweet Potato, Carrot and Cordyceps Soup:
Ingredients:
– 250g sweet potatoes chunks (peeled).
– 150g carrot chunks (peeled).
– 20g dried cordyceps (rehydrated).
– 2 tbsp olive oil.
– 1 onion, finely chopped.
– 1 garlic clove, crushed.
– 500ml vegetable stock.
– 50ml crème fraîche, plus extra to serve.
Method:
1) Use half the oil to coat the sweet potato and
carrot chunks, add plenty of seasoning and roast
at 200C for 25-30 minutes.
2) Meanwhile, fry the cordyceps, onion and garlic
together with the remaining oil on a medium heat
for 10 minutes.
3) Add all the ingredients to a food processor along
with the crème fraîche and stock and blend until
smooth.
4) Pour into a saucepan and cook 10 minutes,
ensuring the soup doesn’t boil. Serve and enjoy!
